Ours exclusively, Lunigiana Estate Oil is produced from Italian trees imported from Tuscany and grown on Sonoma Mountain in California. We hold this particular oil very near and dear to our hearts, because our founder, Ed Stolman imported these varietals from Italy. These olives and their oil served as Ed’s inspiration to bring the first olive oil mill to Sonoma. Not for the light hearted, this is a robust, lively olive oil made with Tuscan olives. It is peppery, rich and tingles on the back of the throat, a sign of its potent antioxidants. Because Lunigiana has a unique olive aroma and robust flavor profile, we suggest using it to finish a dish. This oil works wonderfully in lightly dressed pasta dishes. Be sure to use fresh ingredients to accentuate the bold flavors of this oil! Lunigiana also stands alone beautifully as dipping oil and as base of a flavorful and herbaceous marinade! Enjoy!
