Clementine Cranberry Salad with Clementine Olive Oil & White Balsamic Dressing

This fresh spring salad is loaded with fruity flavor and crunchy roasted nuts, perfect to pack for lunch, a picnic or to entertain guests!


Ingredients
  • Salad
  • Mixed Greens
  • 1/2 cup of chopped mushrooms
  • 1 clementine - peeled and sectioned
  • 1/4 cup of roasted mixed nuts (almonds, pecans, cashews)
  • 1/4 cup of craisins
  • Salt & pepper to taste
  • Dressing
  • 3 tablespoons of Clementine Olive Oil
  • 1 tablespoon of White Balsamic Vinegar
  • Salt & pepper to taste

Directions
  1. Combine mixed greens, chopped mushroom, clementine slices, mixed nuts and craisins in a large bowl
  2. In a small dish, whisk the Clementine Olive Oil, White Balsamic Vinegar, salt and pepper together
  3. Drizzle the dressing over the salad mixture and toss
  4. Add a dash salt and/or pepper to taste
  5. Enjoy!
