Cucumber, Mint, Mandarin Couscous
Made with these products from The Olive Press:

  • 1/4 Cup The Olive Press Mandarin Olive Oil
  • 1 cup Israeli couscous
  • 1 medium cucumber, chopped
  • 2 cups water
  • 3 oz. Feta cheese, cubed
  • 3 TBSP mint leaves, chopped
  • 1 mandarin orange
  • Mandarin zest
  • Salt & Pepper

  1. Heat 1 tablespoon of the olive oil in a pan over medium heat and lightly fry the couscous until golden brown, about 2-3 minutes
  2. Add a cup of cold water and the juice of one mandarin to the pan and stir until absorbed, add more water, 1/2 cup at a time, until the couscous is cooked through, about 10 minutes
  3. Remove couscous from heat and add mint, feta, cucumber and mandarin segments
  4. Add 3 tablespoons of mandarin olive oil, season with salt, pepper, mandarin zest, and toss
  5. Serve chilled and enjoy!
