Grapefruit Ice Cream

Tried and true, this sweet, citrusy Grapefruit Ice Cream made with our LIMITED EDITION Grapefruit Olive Oil is the perfect snack for a hot summer day!

  • 1/4 cup Grapefruit Extra Virgin Olive Oil
  • 1 3/4 cups whole milk
  • 1/4 cup heavy cream
  • 1/4 tsp kosher salt
  • 1/2 cup plus 2 tbsp sugar
  • 4 large egg yolks

  1. Bring milk, cream, salt and 1/2 cup sugar to a simmer in a medium saucepan, stirring occasionally to dissolve sugar
  2. Once sugar is dissolved, remove from heat
  3. Whisk egg yolks and 2 tbsp of sugar in a medium bowl until pale (about 2 min.)
  4. Gradually whisk the hot milk mixture to the egg yolks
  5. Cook over medium heat, stirring constantly, until thick enough to coat the back of a wooden spoon (about 2 min.)
  6. Strain custard through a fine-mesh sieve into a medium bowl set in a large bowl of ice water and whisk in oil
  7. Let cool, stirring occasionally
  8. Process custard in an ice cream maker according to the instructions then transfer ice cream to an airtight container, cover and freeze until firm
  9. Serve in a bowl or a cone and enjoy!
