Raspberry Balsamic Chicken Meatballs

Tender chicken meatballs smothered in delicious, sweet and tangy raspberry sauce. 

  • 3 tablespoons of The Olive Press Arbosana Extra Virgin Olive Oil
  • ½ cup The Olive Press Raspberry Balsamic Vinegar
  • 1 pound ground chicken
  • 1 tablespoon chicken seasoning
  • 1 egg
  • Salt and pepper to taste
  • 1 teaspoon chili powder
  • ¼ cup raspberry preserves
  • Basil – for garnish

  1. Mix the ground chicken, chicken seasoning, salt and egg in a medium bowl and mix with your hands until just combined
  2. Season with salt and pepper to taste
  3. In a skillet, add Arbosana Extra Vrigin Olive Oil and set on Medium heat
  4. When skillet is warmed, form the chicken mixture into medium size meat balls and place in skillet
  5. Brown each side of meatball by turning occasionally for 10-15 minutes
  6. While meatballs are cooking, combine preserves, Raspberry Balsamic Vinegar and chili powder in a small bowl
  7. When meatballs are finished cooking, add sauce to skillet and let simmer for about 5 minutes
  8. Serve immediately and top with basil for garnish if desired
  9. Enjoy!
