Roasted Olives

Happy National Olive Day! Heres to the olive, one of the world's oldest fruits, a staple in the Mediterranean diet with unrivaledhealth benefits and versatility! We've got tons of great ways to add more olives to our diets but this is our favorite so far (second to olive oil of course)!

  • 1/2 cup your favorite Extra Virgin Olive Oil from The Olive Press
  • 2 cups Your Favorite Olive Selection
  • 1 Lemon, sliced into rounds
  • 2 sprigs Fresh rosemary
  • 4 sprigs Fresh thyme
  • 1/2 tsp Fennel seed
  • 1/4 tsp Red pepper flake

  1. Preheat the oven to 425 degrees
  2. Toss ingredients together in a medium bowl until olives are well coated
  3. Spread onto roasting pan
  4. Roast for approximately 20 minutes, stirring occasionally
