Summer dinners couldn’t be easier with the abundance of fresh produce on hand. That’s why we love simple recipes that showcase these bright flavors! This one is a simple salmon topped with garlic, parsley, lemon and Jalapeno Olive Oil, roasted with cherry tomatoes. Serve on top of wilted kale with olive oil and garlic to keep it simple, or even with pesto pasta for a heartier weeknight meal!
2 Salmon Filets
3 tablespoons Jalapeno Olive Oil
6 cloves garlic, crushed
2 tablespoons fresh Italian parsley, chopped
Juice of 1 lemon
1 basket cherry tomatoes, halved
Salt and pepper to taste
Preheat the oven to 375º
Combine 2 tablespoons Jalapeno Olive Oil with garlic, parsley and lemon juice in a small bowl, whisk together. Place salmon filets on an oiled baking sheet and season with salt and pepper. Spread oil and garlic mixture evenly on each filet. Top with the cherry tomatoes and bake for 12-14 minutes depending on the desired doneness. Enjoy!
