This one is a simple salmon topped with garlic, parsley, lemon and Jalapeno Olive Oil, roasted with cherry tomatoes. Serve on top of wilted kale with olive oil and garlic to keep it simple, or even with pesto pasta for a heartier weeknight meal!
Combine 2 tablespoons Jalapeno Olive Oil with garlic, parsley and lemon juice in a small bowl, whisk together. Place salmon filets on an oiled baking sheet and season with salt and pepper. Spread oil and garlic mixture evenly on each filet. Top with the cherry tomatoes and bake for 12-14 minutes depending on the desired doneness. Enjoy!
