Turkey Sloppy Joes with Squash and Black Beans

If you’ve got kids in the family (or if you’re just a giant kid at heart), this recipe is definitely one to try. Revamped sloppy joes that are sweet, juicy, and unexpectedly healthy!

We replaced regular ground beef with lean ground turkey, cooked it on our Master Blend Olive Oil, and instead of using a overly-sugary ketchup and brown sugar sauce like the traditional recipes do, we used canned squash puree. Genius! It’s naturally sweet, so you don’t have to add any sugar, and the squash is loaded with antioxidants, vitamins, and fiber. Triply genius! On top of it, we added black beans into the mix just for good measure. These sloppy joes rock.

Made with these products from The Olive Press:

  • 2 tablespoons Master Blend Olive Oil
  • 1 pound lean ground turkey
  • 1 red onion, finely chopped
  • 1 ½ cups pumpkin or butternut squash puree*
  • ½ cup vegetable broth or water
  • 1 (15-ounce) can black beans, drained
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Sea salt and black pepper, to taste
  • Whole grain rolls, to serve

  1. Heat oil in a medium saucepan over medium. Add turkey and onion; cook until well browned, stirring to break up lumps, about 5 minutes.
  2. Add remaining ingredients to saucepan. Bring to a boil over high heat, stirring. Reduce to a simmer, cover, and cook until thickened but not dry, about 20 minutes. If sauce is too thin, simmer uncovered until reduced. If sauce is too thick, add a bit of broth to reach desired consistency.
  3. Serve warm on split whole grain rolls.
  4. * You may use 1 ½ cups of plain pumpkin or butternut squash soup in place of the pumpkin puree and broth, which gives the sauce a bit more spice and pizzazz.

Notes: Makes about 4 large sandwiches or 8 mini sandwiches.
