Lemon Olive Oil Sugar Cookie

Ingredients


2 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon kosher salt

1 1/4 cups granulated sugar

1/3 cup of Limonato Co-Milled Olive Oil

2 eggs

1/2 teaspoon vanilla

Preparation


STEP 1

Preheat over to 350 degrees Fahrenheit 

STEP 2 

In a bowl, sift together flour, baking soda, baking powder, and salt. Set aside. 

STEP 3

In a second bowl or stand mixer, combine sugar and olive oil until it forms a paste. Add eggs and vanilla and stir until combined and fluffy. Fold in dry ingredients until fully incorporated. you should have a soft oily dough.

STEP 4

Scoop dough into tablespoons balls and put into the fridge for 2 hours or overnight. This step is very important with soft dough. 

STEP 5

Bake 11 to 13 minutes until tops are puffed and starting to crack on the edges. Let cool 5 minutes before eating.
