Mushroom Burgers w/ Goat Cheese, Spring toppings, and Meyer Lemon Wasabi Mustard

We love skipping the norm and sprucing up our burgers with fresh produce and bright flavors this time of year. Here’s one of our favorite recipes with mushroom infused patties topped with goat’s cheese and a light mix of radishes, watercress and Limonato. Just spread some Meyer Lemon Wasabi Mustard on a ciabatta bun and dig in!

  • For the patties:
  • 2 lbs ground beef
  • 1 cup sliced mushrooms, we used shiitake
  • 1 tablespoon extra virgin olive oil
  • 6 cloves garlic, crushed
  • 1/4 cup red onion, diced
  • salt and pepper
  • For the watercress & radish topping:
  • 1 bunch watercress
  • 4-5 radishes, thinly sliced
  • 2 tablespoons Limonato
  • 1 tablespoon White Balsamic
  • For assembly:
  • 4 ciabatta buns
  • Meyer Lemon Wasabi Mustard
  • Goat cheese

  • For the patties:
    1. Heat extra virgin olive oil in a small pan over medium heat, add sliced mushrooms giving them plenty of room to brown on the surface of the pan (do not pile or clump the mushrooms). Once the mushrooms are browned, turn off the head and set mushrooms aside (about 10 minutes). Combine ground beef, mushrooms, garlic, onion, salt and pepper in a mixing bowl. Fold together delicately with your hands, but do not overwork so the patties don’t become too dense.
  • For the topping:
    1. Combine watercress and thinly sliced radishes in a bowl. Whisk Limonato and White Balsamic in a separate, small bowl and drizzle over the veggies. Toss until coated.
    2. Form patties with the hamburger mixture, if the meat won’t hold its shape, just add breadcrumbs! Grill or pan fry patties for about 12 minutes. On the grill, only flip once, in a pan, flip several times.
    3. Toast your ciabatta buns either on the grill on in the oven until desired level of toasting. Place a patty on a bun, crumble goat cheese and top with your watercress and radish mixture along with anything else you might like. We chose avocado and red onion as extra additions. Spread Meyer Lemon Wasabi Mustard on the bun and enjoy!
