Sweet Potato Fries & Black Cherry Balsamic Aioli

Taste tested and approved by The Olive Press Employees, this savory sweet potato and rich black cherry balsamic aioli combination is the ultimate snack, side dish or appetizer!

  • Black Cherry Aioli
  • 1/4 cup The Olive Press Black Cherry Balsamic Vinegar
  • 1/2 cup mayonnaise
  • 1/4 tsp salt
  • 1/8 tsp cracked pepper
  • 1/4 clove garlic (minced)
  • Sweet Potato Fries
  • 2 large sweet potatoes
  • 3-4 tbsp Organic Tuscan Extra Virgin Olive Oil
  • 1/4 tsp Cracked Pepper
  • 1/4 tsp Sea Salt
  • Optional
  • Chili Powder to taste
  • Paprika to taste

  1. Reduce Black Cherry Balsamic vinegar to 1/8th of a cup on stovetop over medium heat, then let cool to room temperature
  2. Mix in remaining aioli ingredients, refrigerate
  3. Pre heat oven to 450 degrees
  4. Cut sweet potatoes into strips (size depending on preference)
  5. Toss in bowl with Organic Tuscan Extra Virgin Olive Oil, salt, pepper, chili powder and paprika
  6. Spread evenly on baking sheet 
  7. Bake for 20 minutes or until golden brown
  8. Enjoy!
